I love Lara Bars. They're clean and healthy and yummy. So I decided to make some of my own! This is about 25 dates and 1 and 1/4 cup of cashews, all blended up in my food processor. It wasn't blending so well, so I added 1/4 tsp vanilla and 1/4 tsp of water. That did the trick! I blended for a bit longer, then added a pinch of salt and about 1/4 cup of chocolate chips. Plop it out onto wax paper, roll it out to flatten and then cut them into bars. Easy and delicious! And still fairly healthy, I think, even with the chocolate chips in there.
