Healthy cooking

I tried a bit of healthy cooking on the weekend. I found this pin on Pinterest for zucchini bread:
The good thing about it is you just put everything in the blender and whirrrrr it up! It called for coconut flour, which I think I'm not used to. The taste is very nutty and the batter was quite wet. Maybe I blended for too long? It's still tasty, but I have to toast the slices in the oven before I slather them up with butter and gobble them down.
I also made more date balls, this time with dates, almonds, cocoa powder, and unsweetened coconut flakes. Really simple and delicious. And healthy :)
