Pina Colada Cupcakes

Our secretary at work is on a cupcake-making kick. These are her specialty: Pina Colada Cupcakes. There's fresh pineapple in the batter, rum flavouring in the cream cheese icing, and it's topped with fresh coconut and a cherry. YUM!
